You use less water (soft polenta is about 1 part by volume corn meal : 5+ parts liquid; cakes are 1 part corn meal : 3 parts liquid).<BR/>Cook it up the same. spread it smooth in tray. Let cool. However, this acid (chlorogenic acid) is a great anti-oxidant which not only helps prevent cancer but also helps break down arterial plaque and lower cholesterol. Recent studies also show it is effective in lowering blood pressure. What's not to love? The taste you say? Cook it slowly in a Moussaka or a Ratatoulie (along with zucchini which has similar properties). Or put some on the outdoor grill which for some reason makes it taste sweet!
