Nancy's Asian Chicken Salad

Nancy's Asian Chicken SaladNancy is my aunt and she made this salad years ago for a family picnic and the crowd went wild. It's really about the tastiest salad I've ever had--probably because of the noodles, I'm a sucker for noodles.

Anyway, it's a terrific potluck creation and is nice and cool on a hot summer day. I make it all the time and never get tired of it.

3 packages Top Ramen, broken in pieces and cooked
2 grated carrots
3-4 green onions, sliced
1 cup peanuts
3-4 chicken breasts, grilled and sliced

For dressing:
1 cup rice vinegar
8 tablespoons sugar
4 tablespoons fresh lemon juice
4 tablespoons fresh lime juice
4 teaspoons sesame oil
4 minced garlic cloves

Combine all of the ingredients for the salad in a large bowl. Combine all of the ingredients for the dressing in a bottle and shake to mix. Pour the dressing over the salad and you're good to go.

  2. Those packaged ramen noodles are great -- just throw away the seasoning packet that comes with them (pure salt, and often with MSG added), and the noodles are very all-purpose.

  8. I love salads in the summer. Being pregnant few things have sounded good in a long time (to my poor husbands frustration) but this sounds delicious, so I'll have to whip it up!

  12. I tried this and LOVED it! My neice was just adopted from S. Korea and she wasn't eating many things, so I was thrilled that she liked my dish. Must've reminded her of home.
