This is a great all-purpose marinade, good for fish, chicken or kabobs. However, Andrew went fishing last week and as now we have a freezer full of fresh coho (silver) salmon and halibut it's fish tonight. Just be sure and give it plenty of time for the marinade to set. Oh and a tip: if you don't want to run the risk of your fish falling through the grill, lay a piece of aluminum foil on the rack and grill the fish on top of it.
1 cup sugar
¾ cup soy sauce
2-3 cloves of garlic
2 green onions, chopped
¼ teaspoon paprika
1 tablespoon red wine vinegar
1 tablespoon oil
1/8 teaspoon pepper
1 tablespoon fresh parsley
1 tablespoon sesame seeds
1 silver salmon, filleted
Mix the above ingredients (sugar through sesame seeds) and marinated salmon overnight. Barbecue or broil, skin side down, until it flakes. Excellent served with a pilaf or salad.
The marinade also goes well with beef or chicken.
