Chicken Salad with Tahini Dressing

We eat a lot of salads (much to Grace's distress) and this one ranks high in the Asian salad category. Tahini is usually in the health foods section of the grocery store but can be tricky to find. It's like peanut butter only made instead from ground sesame seeds.

For salad:
6 green onions, sliced
1 red bell pepper, diced
6 cups torn romaine
2 cups chopped Chinese cabbage
1 c peanuts
6 chicken breasts, grilled and thinly sliced
3-5 T toasted sesame seeds sprinkled on top

For dressing:
1/4 tahini paste
3 T soy sauce
3 T red wine vinegar
2 T olive oil
2 t sugar
1 T chili sauce
2 garlic cloves, minced
1-2 T water

Toss greens with onions and peppers, top with peanuts. Mix dressing ingredients and use water to thin if necessary. Mix dressing with sliced chicken, coating thoroughly. Top greens with chicken and sprinkle with sesame seeds.
