Coconut-Macadamia Cookies

Coconut Macadamia CookiesThe great thing about these cookies (apart from them being--um--cookies) is that they're soft and chewy. Really soft and chewy. If this were taking a test they'd get a definite A+ in chewiness and softness.

And not only straight from the oven but they'll stay soft and chewy for a couple days after--assuming of course that you can get them to stick around that long.

1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 cup uncooked quick-cooking oats
1/2 cup flaked coconut
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup coarsely chopped macadamia nuts

Preheat oven to 350 degrees. In a large mixing bowl cream sugars and butter then add vanilla and egg. Once those are mixed in add the dry ingredients through salt and mix slightly. Add the nuts and mix until sufficiently combined.

Drop the dough by heaping teaspoons onto an ungreased cookie sheet (you should be able to get around 32 cookies, that's what I get) and bake for 12 minutes.

And don't forget the milk!

  7. Okay you've got my attention. My favorite cookies are soft and chewy. One can't be without the other. For the cookies to stay soft and chewy after being out of the oven for a while is a plus.
