Pita. The Homemade Kind.

Homemade PitaI love all types of bread--in fact, there really isn't a bad bread out there. What's particularly wonderful about this recipe is that I whip it up in my bread machine until about 45 minutes before dinner then I shape the bread (carefully, the less you handle it and the less you fold, crease or knead the better) and let it rise a bit then bake it at such high temperatures so quickly that it's ready by the time dinner is on the table.

And while a loaf of fresh bread really needs to cool for an hour before serving for fear of things getting mushy and doughy these are thin enough that they can be served immediately nice and hot and deliciously soft. Perfect for the lamb recipe I posted earlier this month.

1 ¼ cups water
3 cups flour
1 ½ teaspoon salt
2 tablespoon olive oil
1 ½ teaspoon honey
1 tablespoon yeast
2 tablespoons cornmeal for sprinkling on pan

Combine the above ingredients in your bread machine and set to "dough" cycle. When ready, divide the dough into 8-10 circles and carefully flatten the dough into an oval. If you want it to puff properly you don't want to fold or crease it and to work the dough as little as possible.

Transfer the dough to a pan sprinkled with cornmeal to raise. Preheat the oven to 475 degrees and after 30 minutes of raising bake until slightly browned. If they didn't puff properly you can always gently cut them with a serrated knife after they've cooled a bit.

We love pita but are always disappointed that the pita available in the market is never like what is served at restaurants. I'll definitely have to try this recipe...do you think it makes a difference that I don't have a bread machine?

I love not having all the additives in foods...I wonder how they get it all in and why is it all necessary..
I have the best recipe for pizza crust (starting in bread machine)..So good...
I am going to make these pitas today as I have all the on hand..

I made pita once (years ago), but I'll have to try this one.

I know what you mean about letting fresh bread cool...however, since there's only two of us in the house now, the bread machine loaves I make get frozen after the first dinner and we can microwave pieces as we need them. A loaf can last a week or more!

We love pita (w/ hummus, especially). My daughter calls it circle bread. I haven't made it in quite a few years, though. I'll give this recipe a go. I don't use a bread machine, so I'll have to adapt the recipe.

Go ahead and make it without a machine, you would just try it by hand and if you've made bread before you can imagine the process--it's pretty standard and once you have the ingredients the rest follows the usual plan.

Kneading is therapeutic but it's hard to find time to do it myself.

Oh, this is great, Michelle - can't wait to try these! Thank you! I've made dough before without a bread machine, so I will try it as you said! It would be perfect if I were able to make these myself - there is the most delicious veggie pita recipe I like to make, but store-bought pita always breaks.

Sounds great! And fairly easy too. Any idea how to make this without the bread machine? I decided to get rid of mine because it is a space hog.

You've got one lucky family! Homemade pita sounds delish. The stuff in the stores can't possibly compete. Wish I had a bread machine.

In my opinion, there is no pita besides homemade pita. I think they sell cardboard at the grocery store labeled "Pita", but it's either a major typo, a huge joke, or blatantly false advertising.

I made a similar recipe this weekend. Yours looks good too. I think I'll have to try it out with some homemade hummus.
I love my bread machine...it makes me look like a kitchen wizard.

I love making homemade pitas. The real trouble I have is getting them to pocket properly. Yours look nice and pocketed, but mine are flat. I might have to try your recipe instead :)

I made pita bread last week to go with the hummus we took to a party. Your recipe looks a lot easier. I don't have a bread machine, but I kneaded while listening to "Wait, Wait, Don't Tell Me" and the time went quickly. The kids loved it.
