A big hit for breakfast, but could be a great dessert as well.
16 oz fresh or frozen strawberries
1/2 c sugar
1/3 c orange juice
2 T lemon juice
1/2 t vanilla
8 oz mascarpone cheese
1/2 c whipping cream
2 T sugar
1 t vanilla
1/2 c sugar
1 c all purpose flour
1 c whole wheat flour
1/2 c cocoa
1 T + 1 t baking powder
1/2 t salt
2 beaten eggs
2 c milk
6 T oil
In a large saucepan over medium heat stir strawberries, sugar, juices and vanilla until strawberries are warm and soft, about three minutes. Puree with a hand mixer until berries are broken up and consistent throughout. Simmer until sugar is dissolved, about 10 minutes more. Remove from heat.
Meanwhile, combine mascarpone, cream, vanilla and sugar until soft peaks forms. Cover and chill up to two days if needed.
In another bowl combine sugar with flours, cocoa, baking powder and salt. Separately combine eggs, milk and oil then stir into dry ingredients until combined.
Preheat waffle iron to high and when hot spray both sides lightly with cooking spray. Use about 1 1/4 c batter for each waffle, cooking about 9 minutes for each. To serve, sprinkle powdered sugar on finished waffle, top with a drizzle of strawberry sauce and a dollop of mascarpone cream.
