Even though these sandwiches have things that scare my sweet husband like onions, capers, green olives--things he claims go "bump" in the night--he actually likes these juicy gems and their yummy-spicy goodness. Me? I love them.
12 pieces sourdough or rye bread
4-6 garlic cloves
3-4 tablespoons capers, drained
½ teaspoons oregano, dried
½ cup chopped roasted red pepper
½ red onion, sliced
1 Roma tomato, sliced
½ cup pimento stuffed green olives
4 ounces dried salami
4 ounces sliced ham
6 slices provolone
Sprinkle bread with olive oil and red wine vinegar, spread garlic, capers, olives and oregano on top. Then pepper, tomato, salami, ham and provolone. Brush outside with olive oil and press in panini until golden.
