Dutch Oven Mississippi Mud Cake

Okay, credit first goes to Byron's Dutch Oven site for this great recipe and then credit goes to my brother-in-law Kendall for making it on our annual two-family campout this summer. Spencer is already saying he wants it for his birthday dinner (I guess he's forgotten birthday cake). No, those aren't beans and shredded cheddar on top, it's the chocolate chips and chopped walnuts.

For cake:
1 yellow cake mix, mixed as directed

For mud:
1/2 c cocoa
2 c brown sugar
1 c hot water
1 t cinnamon
2 t vanilla

For topping:
1 1/2 c chocolate chips
3/4 c chopped walnuts

Line the bottom and sides of a 10" Dutch oven with heavy foil, avoiding any seams where the mix might leak through and spray lightly with oil. Pour prepared cake mix into Dutch oven. In a separate bowl combine all "Mud" ingredients and stir until well mixed. Pour mud mixture over the cake batter. Cover Dutch oven and bake using 8-10 briquettes bottom and 14-16 briquettes top for 60 minutes. Or cook 70 minutes at 350 in conventional oven, checking to make sure it's done. Sprinkle chocolate chips and pecans over top of cake about 5 minutes before cake is done so that they melt over the top.

Serve warm topped with soft vanilla ice cream or whipped cream

Have usually made this cake in the oven; never tried a dutch oven for it!

MMM. That sounds yummy. It would be a welcome alternative to the cobblers we always tend to fall back on when we dutch overn.

P.S.
Kailani- A dutch oven is basically a large, cast iron pot with a lid that you use to cook over a campfire/coals. You can also just cook over charcole brickettes if you want to do it at home instead of camping.

And I would add to Loralee's comment that you can use Dutch ovens in a conventional oven if you want. They're a good thing to have around if you cook outdoors or needed to cook during an emergency situation (such as an earthquake knocking out your power, right kailani? :) They're kind of a fun thing to play around with and you can get them at REI but they'll be expensive there (that 10" one I have normally runs $54, but they'll go on sale for as low as $20 sometimes).
