Asparagus with Garlic and Citrus

Asparagus with CitrusJust in time for spring, this tasty dish supposedly makes 4 to 6 servings, but that entirely depends on how much you like asparagus. In my family it makes 1 big serving, because I'm the only one who will willingly touch asparagus (and I'm very willing) but then I don't give the kids much choice in the matter.

1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
3/4 teaspoon kosher salt
Pinch freshly cracked black peppercorns
2 pounds asparagus stalks, washed and trimmed

In a jar with a tight lid combine the olive oil, lemon juice, garlic, salt, and pepper. Shake it well to combine the ingredients.

Cook the asparagus in lightly salted boiling water for about 3 minutes. Do not overcook. Drain and then plunge the vegetables into a bowl of cold water. Drain the asparagus again and gently toss it with enough vinaigrette to coat it lightly.

The hubby is the only one willing to eat it in this family. But then I am not very adventurous on foods and my parents never liked it so I don't think I have even tried it.

It's funny, because I was planning to visit the grocery store this morning specifically to buy asparagus.

I plan to try it tonight. Looks easy, and I LOVE it that it calls for stuff you'd normally have in the pantry.

This is my favorite, favorite, favorite recipe! I LOVE it. It's also good if you have put a teensy bit of nutty brown mustard in the dressing. It sounds gross but it adds a new dimension and it clings to the spears nicely. I also steam mine. I can eat a whole pound all by myself (good thing as I am the only one whole will touch it with a ten foot pole!) Asparagus will clear up a bladder infection, NO LIE!

asparagus is so yummy! my mother use to grow it in our garden when i was growing up. i remember that it took about 3 years for it to mature enough to harvest.

I think the key to eating veggies is to keep it interesting by trying different preparations. This recipe definately fits the bill and you can bet I'll be trying it out. Thanks!

I've been experimenting with asparagus and balsamic vinagar - I tossed some asparagus, olive oil, fresh garlic, & balsamic vinegar in a pan and let it cook (covered) until it reduced, The balsamic vinegar sort of glazed the asparagus and it turned out pretty good...

Yum!!! Asparagus. My kids don't like it so there is MORE FOR ME!!! That's what I tell them. They will figure it out soon enough.

Like with brussel sprouts I love the first bite and then hate all the rest. It's weird but so am I.

I too love asparagus with lemon. Have you tried it with orange zest and/or juice. It's lovely as well.

I'm so impressed that someone out there thought this recipe looked good, I have to admit that I was a bit worried posting something so healthy and green instead a cheesecake or other sweet treat.

I just wish I could grow asparagus here.

Do you know how abused I am? I've never had asparagus prepared the correct way - only the mushy yuck my mom made. I will have to give it another try!

I use the same ingredients, but as geekwif said, I roast it. I'll try it your way. If you love asparagus, try roasting it, too. Lovely site you have here.

I'm with Sara just above -- my mom only made the mushy kind that I think must have come from a can, so I always thought that I HATED asparagus -- until I had the fresh stuff here in France! And I found out that prepared the right way, it can be darn good... So I'm looking forward to getting some in the spring myself, and I'll be sure to try it with this vinaigrette -- it has everything I love in it: olive oil, balsamic vinegar, garlic, pepper -- and I too always have those things in my kitchen...
