Chocolate Cream Torte

Chocolate Cream TorteWith the summer heat beating down (and tell me it's warm where you are so I can live vicariously) you need a quick, easy, tasty no-bake dessert. This is your lucky day because I have the recipe for you.

24 chocolate cream-filled cylinder cookies cut in half
2 cups heavy cream
4 tablespoons cocoa powder
1 cup of powdered sugar
2 teaspoons vanilla extract
1 envelope of unflavored gelatin
1 cup of fat free half and half
cocoa powder to sprinkle over the top

Line a large loaf pan--the largest you've got--with plastic wrap then line the sides with the cookies. This can be tricky to get them to all stand upright at once but stick with it, you can do it. If all else fails, use a little bubblegum to stick them to the wall (kidding).

Whip the heavy cream to soft peaks then add the cocoa, powdered sugar and vanilla and beat till stiff peaks. Meanwhile, in a small saucepan heat the half and half on low heat gently, then sprinkle the gelatin over the top and let it sit for a couple minutes to soften it. After a few minutes whisk it gently in the pan to dissolve it and stir until it's completely dissolved. So far so good?

Let the half and half cool slightly then stir it into the whipped cream gently. Pour the whole mixture into the prepared loaf pan and let it chill in the refrigerator until it's set (an hour or two).

To serve it, turn it upside down on a platter, peel off the plastic wrap and sprinkle with a little cocoa powder. Slice it and serve topped with extra whipped cream if desired.

Just throwing this out; does it help to spray the waxed paper with non-stick cooking spray? I have used it to "stick" roll-y spices to roasts. I know it doesn't make sense since it's a "non-stick" spray.

and it is hot here today in CT .. in the 90's for sure. My veggie garden is also loving the humidity.. we've had lots of rain lately. Gotta go out and pick some string beans for tonight.

We finally had a wee bit of good weather for the wedding we attended in the countryside yesterday, but the rainy crappy cool weather came right back again today. I can't take it anymore!

Ooo lovely, a coronary on a plate, so decorative! Now if it had been lemon......that would be a different matter completely as we all know how good lemons are for health!

Feel free to live vicariously through me: it's been over 90 degrees for roughly 10 days. At some point I became a weather wimp and this stinks. I read yesterday that you couldn't get a coat on your daughter and I couldn't remember what wearing a coat was like! LOL Hothothot. And this dessert looks divine, I'll have to make it! Mmmm...

But being an Aussie, I'm not sure of some of your ingredients. Are the cylinder cookies - wafers with chocolate inside them? That's what it looks like to me.

What is half and half?

As for the weather, the sun is shining and quite warm although we are in the middle of winter. I went for a walk down the beach where it's much to cold to swim but will upload the photos I took later.

Boy, it's a good thing you said you were kidding about using the bubble gum. I follow recipes exactly, so I would have used some. I wonder if Extra bubble gum would have worked?

Carolanne: Half and half is basically half full cream and half regular milk. Some Americans like to use it in their coffee rather than plain milk, though nowadays people are getting more sensible about fat (except for desserts!)

OK, I made this yesterday!!! It came out pretty good. I was disappointed that the cookies got mushy and didn't stay crispy, but I don't know how you could avoid that unless you put them on at the last minute before serving -- *maybe* that could be done..... Thanks, Michelle! Everyone who tasted it loved it.
