With the summer heat beating down (and tell me it's warm where you are so I can live vicariously) you need a quick, easy, tasty no-bake dessert. This is your lucky day because I have the recipe for you.
24 chocolate cream-filled cylinder cookies cut in half
2 cups heavy cream
4 tablespoons cocoa powder
1 cup of powdered sugar
2 teaspoons vanilla extract
1 envelope of unflavored gelatin
1 cup of fat free half and half
cocoa powder to sprinkle over the top
Line a large loaf pan--the largest you've got--with plastic wrap then line the sides with the cookies. This can be tricky to get them to all stand upright at once but stick with it, you can do it. If all else fails, use a little bubblegum to stick them to the wall (kidding).
Whip the heavy cream to soft peaks then add the cocoa, powdered sugar and vanilla and beat till stiff peaks. Meanwhile, in a small saucepan heat the half and half on low heat gently, then sprinkle the gelatin over the top and let it sit for a couple minutes to soften it. After a few minutes whisk it gently in the pan to dissolve it and stir until it's completely dissolved. So far so good?
Let the half and half cool slightly then stir it into the whipped cream gently. Pour the whole mixture into the prepared loaf pan and let it chill in the refrigerator until it's set (an hour or two).
To serve it, turn it upside down on a platter, peel off the plastic wrap and sprinkle with a little cocoa powder. Slice it and serve topped with extra whipped cream if desired.
