I don't know why this is called "Dracula's Revenge" because with all the garlic in this baby that vampire isn't getting anywhere close to you. For days.
But don't let that scare you because this is one of the top ten most requested meals around here, very kid-friendly with all that cheesy-noodly-sausagy goodness. It may not be fancy but they'll like it.
2 garlic heads
1 pound Italian sausage
¼ teaspoon dried sage
¼ teaspoon dried rosemary
2 tablespoons butter
1/3 cup flour
6 cups milk
1 cup Parmesan cheese
2/3 cup Gruyere cheese
½ teaspoon salt
1/8 teaspoon pepper
8 ounces cooked penne
Bake garlic at 350 degrees for 1 hour. Separate the cloves and squeeze to extract pulp. Meanwhile, cook sausage till brown then stir in rosemary and sage. Add butter and stir until it melts, then stir in flour. Whisk in milk and stir constantly, scraping the bottom, until thick. Reduce heat and cook for two more minutes. Stir in garlic, cheeses, salt and pepper. Serve over baked pasta topped with extra cheeses.

This sounds so good. Now, I am not much of a cook - what is the pulp of the garlic? Then once you have it extracted...do you just put in the rest of the clove? do you mince it?
