I have to admit that this little experiment was a bit of a gamble--when Andrew saw what was in his sandwich he was a bit nervous but after sampling it he agreed that it was an interesting and not-unpleasant combination. Me? I'd upgrade that assessment to "delicious" because I love that savory-sweet combination.
Prosciutto is just a fancy, thin (expensive) Italian ham and while I normally wouldn't advocate spending a ton of money on super model bacon a little goes a long way and it really gives the sandwiches a delicate texture and flavor.
Anyway, we loved it--and it beats those old American singles grilled cheese sandwiches out the door.
10 ounces sliced prosciutto
half a cantaloupe, thinly sliced
4 slices havarti cheese
8 slices crusty French bread
butter
Divide the prosciutto, melon and cheese among the four sandwiches then brush the outside with melted butter. Grill until golden brown--if the cheese isn't melted inside yet you can always zap it for about 20 seconds in the microwave.

Oh. my. God.
Prosciutto. Havarti. And the melon. Pure genius!
My mouth is watering. What a delicious and lovely idea!
That looks yummy, but I admit that the melon sounds "interesting". I think we'll give it a go this week and see...have a feeling the little ones will prefer the grilled cheese. But that just saves more of the "real thing" for hubby and I.
That looks way too delicious! I'm not sure I should even try because then I will never be happy with regular old grilled cheese again!
I love prosciutto and melon but never thought of making a sandwich with them! Not sure I would like the melon warm but you make it look and sound so good I think I'll have to give it a try!
Need a mop.... salivating.... oohhhhh.....
Looks so good.... would like one please... Now I have to go to the store and find prociutto
That looks awesome! We enjoy turkey breast, brie, thinly sliced apples (with some drizzeled honey on the apples) heated up in the sandwich press. Giver 'er a go I think you will love it!
I AM DROOLING!
I would never ever have thought to include canteloupe! sounds yummy!
Oh, MAN! And I just fixed the boring grilled cheese tonight, before I read your post. From now on, I'm gonna have to check out your posts before I fix dinner Sunday night!
I had a similar sandwich which had turkey, fresh pineapple slice and monterey jack! It was so memorable...I gotta find that recipe again...
One word: Yum!
That would be a hit with my husband & I, but I don't know if the kids would eat it. Maybe this could be our grown-up sandwich on grilled cheese night :)
What a great idea! I love grilled cheese and I have some leftover proscuitto from a lasagna I made this weekend so I'll have to give this a try. It's a nice way to make a simple dinner into a unique, well rounded meal.
Oh. That looks amazing...
Yummy!
Oh my. I think I am in love. Is it possible to be in love with a sandwich? We lived in Italy for several years & one of my absolute favorites was the prosciutto & melon. But, I never thought to turn it into a sandwich. Wow!
That sounds delicious. I have some canteloupe here ... mmm, no proscuitto though. I'm hungry. I now have a craving. Wonder if I should try it with ham instead. I think I will.
