Homemade Cheese Bagels

Homemade Cheese BagelsDo you get tired of me giving recipes for bread machines? Because I don't get tired of using them. Just remember that if you don't have a machine you can make up the dough in traditional methods very satisfactorily, it just takes a LONG TIME. A looooong time. But still the kneading by hand process can be satisfying. Rumor has it . . . wouldn't know about that myself.

Anyway, this is probably the favorite bread recipe in the house--a homemade bagel is a joy to all.

1 ½ cup water
4 ½ cups flour
3 tablespoons sugar
1 tablespoon salt
2 tablespoons yeast
12 ounces cheddar cheese, cubed into 12 pieces

Combine all the ingredients except the cheese in your bread machine in the order they're listed. Set the machine to the "dough" cycle then let it go.

After the dough is ready divide it into 1 dozen equal pieces. Roll each piece into a ball and poke your finger through the middle, stretching it out to make a circle such as you'd expect from a bagel. Let the dough rise on a floured surface. After rising 30 minutes, add each bagel to boiling water mixed with 1 tablespoon sugar and boil for 2 minutes--one minute on each side--then remove with a slotted spoon and drain thoroughly before placing it on a greased baking sheet with a cub of cheese on top of the bagel.

Bake at 420 15-20 minutes or until the bagels are golden brown.

mmmmmm, bagels! Our favorite thing to eat topped with cheese and a fried egg. I'll have to try making our own!

I have to try this. I LOVE warm cheese bagels with whipped cream cheese. And I haven't had a decent bagel since I left the west coast.

Sounds yummy. I have a question about the yeast. I don't keep "active dry" yeast in the house. My personal bread recipe uses rapid rise/quick rise yeast, and when I buy the jar at the store, I buy "bread machine" yeast. Can I use that?

Our bread machine gave up the ghost, but I used to help my mother make bread. I don't mind the kneading part (that sort of thing is actually therapeutic for my arthritis), but there's no place in our house that's warm enough to make the dough rise properly. I'm still experimenting. But these bagels make me want to make another try!
