This is a recipe I pull out for winter breakfasts and yes I know that the nutritional value is probably minimal and that I might as well feed the children a bowl of Hershey bars with milk but I never claimed this was a health-food blog.
This can't be any more sugary than pancakes or waffles, right? And with the apple cider syrup you're at least getting a smidgen of vitamins in there, right?
I won't even tell you about the night a couple weeks ago when Andrew was gone on business and I fed the kids chocolate cake for dinner . . .
For dumplings:
1 ½ cup flour
2 ¼ teaspoons baking powder
1 teaspoon cinnamon
¾ teaspoon salt
6 tablespoons butter, in pieces
1 ½ tablespoons whole milk
1 egg plus 1 egg yolk
For syrup:
2 cups sugar
3/4 cup water
4 c apple cider
Yogurt or whipped cream for topping
Combine dry ingredients for dumplings (flour through cinnamon) then cut in butter until the mixture resembles coarse bread crumbs. Add milk and eggs and stir until it forms a ball.
Separate the dough into about 24 1/2-inch balls and set aside.
Meanwhile, cook sugar and water over medium without stirring until sugar melts and turns amber, 14 min. Cook two more minutes then whisk in apple cider. Bring to a simmer and drop in balls, cooking until golden brown (20 min). Top with yogurt or whipped cream.

Those look great. I can't wait until the weather warms up some and I can use my deep fryer on the deck. The smell of the oil in my house 'bout makes me ill after awhile. :)
Not that I would know, having served my kids funnel cake for breakfast last week - at least I used whole wheat flour. :)
And if I read completely through, I would notice that they are cooked in water.

I have one allergic to milk, so I'll have to substitute rice milk and olive oil margarine, too. Oi, I hope they turn out...

These look great. Will definitely try them. When James is out of town we have pancake night for dinner..and not made from scratch pancakes..the Costco bag you add water to. I am also the mom who does Peanut Butter on a spoon for dinner..except now with the salmonella stuff going on with peanut butter I have to come up with plan b.

Oh my goodness, these look incredible! I think I am going to request these for Valentine's Day Breakfast (you just gave me another idea - I'm asking my husband to make me breakfast on Valentine's Day - it's only fair, right?!) :)
Breakfast is seriously my favorite meal . . . sometimes I just have to have waffles or crepes for dinner. Now I'll have to try this out . . . It looks good enough to help me move past the word "dumpling," which has always struck me as unappetizing. :o)

We just had chicken and dumplings yesterday for lunch and my oldest wanted to know if there was a recipe for a dessert type of dumplings. I just showed this to her and she's all excited to try it out. So am I - it's her week to cook!
