Coconut Salmon with Pineapple Salsa

Coconut Salmon with Pineapple SalsaIn case you were wondering, shrimp can be substituted for the salmon in this recipe but we just always seem to have salmon on hand instead.

You could also substitute peaches or mangoes in the salsa and have great results, it's just whatever you have on hand.

2 salmon fillets, cut into small chunks
2/3 cup cornstarch
1 1/2 teaspoons salt
4 large egg whites
1 1/2 cups flaked coconut
cooking spray

Roll small pieces of salmon or large prawns in the cornstarch mixed with the salt. Then dip them in the egg whites that have been beaten until frothy. Then roll them in flaked coconut and set the pieces in a lightly greased baking dish. Spray them slightly with low fat cooking spray and bake at 400 degrees for 20 minutes, turning halfway through.

1 15-ounce can of crushed pineapple (you can use fresh and it's better)
1 medium sweet red pepper, finely chopped
¼ c sliced green onions
half a 4-ounce can of diced chilies
2 cloves garlic, minced
3 tablespoons chopped cilantro
3 tablespoons olive oil
½ teaspoons shredded lime peel
2 tablespoons lime juice
1 tablespoon white vinegar
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon sugar or honey

Toss all the salsa ingredients and chill until ready to serve. Serve salmon with a side of steamed rice and topped with salsa.

We love coconut shrimp, and this recipe with salmon looks fantastic! I'll bet the pineapple salsa makes it very flavorful - going to try it!

If I liked seafood this would be a perfect recipe. I know I am missing out by not eating anything that resides in the ocean . . . but it's all so - so - fishy!

I tried this today! I had lots of leftover raw chicken and shrimp from our Valentine fondue night that I knew I needed to use. I am glad I looked at your blog before I made dinner. It was delicious and all of this kids loved it!

Made this last night for our family and friends. I only had smoked trout, but it was good! Anyone have a better way of grating coconut than a food processor? Mine kept getting stuck every 10 seconds.

We make mango salsa a lot, so I'll definitely be trying it with pineapple!
As to salmon, I would be the only one eating it. And eastern Kentucky is not exactly a hotbed of fresh salmon availability.

Yum. This is definitely a keeper! I fixed it last night for my hubby and I, and he was practically licking his plate before he would push away from the table.

To jubilee--I used to think all fish was fishy. But now that I live in AK (and it's socially unacceptable here to feel that way about seafood) I had to try a few fishy things. I just have to recommend to you that you try FRESH fish. Just a bite. It hooked me. Never eat seafood unless you can smell the water.

Tried it tonight. It was a big hit. We called it salmon candy bars. The crispy coconut was awesome. We tried it with a modified pineapple salsa, regular salsa, and sweat Thai chili sause. The kids liked it with the regular salsa, I liked it with the pineapple salsa and the Thai mixed.
