Fresh Goat Cheese Mixed Salad

Fresh Goat Cheese Mixed SaladI love fresh goat cheese and this simple salad goes so well with all kinds of meats, pastas, soups and sandwiches. Really it's an all-purpose favorite-fixed it just last night in fact!

1 cup pecans
3/4 cup sugar
6 cups mixed greens
1 cup crumbled goat cheese
1/2 cup sliced green onions
3/4 cup Craisins

For dressing:
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon fresh, chopped thyme
1/2 cup extra virgin olive oil
salt and pepper to taste

First heat the sugar in a saucepan until it begins to melt and turn golden. Once melted toss the pecans until they're covered with the sugar and set them to cool on a greased cookie sheet.

Combine the rest of the salad ingredients and break apart the pecans (or chop them) and add to the mix. Combine all the salad dressing ingredients and you're ready to go.

ooooh, this is one of my all-time favorite salads. Even if you cut out the sugar on the pecans, it's still good!

The salad looks great. For some reason, the last few holidays I've had to bring the salad for my family's get-together. This is going on my list for the next time I'm asked!

After we try it at home a few dozen times first, of course!

Yum! I make something very similar but with Sultanas [golden raisins] but I plump them in boiling water and lemon juice. Sadly no-one but me can abide dried fruit in a salad.

Goat cheese and pecans are a great combination. In fact, I think a great meal is goat cheese, spiced pecans and a glass of wine!
