I love fresh goat cheese and this simple salad goes so well with all kinds of meats, pastas, soups and sandwiches. Really it's an all-purpose favorite-fixed it just last night in fact!
1 cup pecans
3/4 cup sugar
6 cups mixed greens
1 cup crumbled goat cheese
1/2 cup sliced green onions
3/4 cup Craisins
For dressing:
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon fresh, chopped thyme
1/2 cup extra virgin olive oil
salt and pepper to taste
First heat the sugar in a saucepan until it begins to melt and turn golden. Once melted toss the pecans until they're covered with the sugar and set them to cool on a greased cookie sheet.
Combine the rest of the salad ingredients and break apart the pecans (or chop them) and add to the mix. Combine all the salad dressing ingredients and you're ready to go.

ooooh, this is one of my all-time favorite salads. Even if you cut out the sugar on the pecans, it's still good!
looks yummy!! :)
I LOVE goat cheese and add it to my salad daily. This recipe sounds so good - must try it!
I am now a true believer that all good things comes from Alaska. This recipe is testament to my belief. How easy it for you to find "sustainable agriculture" in your neck of the woods?
Day 3 of the Where’s Wenda? Contest is here. Today I am visiting all of the SITStas that commented on Three Bay B Chicks. That means you! Thanks so much for stopping by and for being a great SITSta!

This salad looks wonderful! Just dropped in to say hello!
The salad looks great. For some reason, the last few holidays I've had to bring the salad for my family's get-together. This is going on my list for the next time I'm asked!
After we try it at home a few dozen times first, of course!
Now this is something I've actually made before. It is so darn good you'll be licking the bowl and going back for thirds.
You always have the best recipes. I can't tell you how many times you have tried and tested my vegan will power! (In this case, I might just have to find some organic cheese and cheat a little).
You had me at "hello" with this one!
Very yummy. They just did a challenge on Chopped with Goat Cheese, made me smile you had a recipe with it too ;).
Hope your having a wonderful weekend!
LOVE this recipe. It is quite similar to one my husband makes. Yummmmm.
Mmmm....goat cheese AND Craisins!
Yum. Goat cheese...
I never ate goat cheese until I was a resident MD studying in Boston...go figure.
This recipe looks great. My husband has been hinting for me to add more salad nights for dinner. Best of all, this recipe looks easy to prepare.
That looks DELICIOUS!
All the ingredients are my favorite!
Yum! I make something very similar but with Sultanas [golden raisins] but I plump them in boiling water and lemon juice. Sadly no-one but me can abide dried fruit in a salad.
Cheers
Oh I love goat cheese on a salad! LOVE it! This looks great.
Goat cheese and pecans are a great combination. In fact, I think a great meal is goat cheese, spiced pecans and a glass of wine!
oh yum, i make something similar, but was missing the homemade dressing to go with it... thanks!
I bookmarked this recipe when you posted it, but just recently got around to trying it. I made a big batch just for myself and it's practically all I've been eating the past couple of days. I love it! Definitely a new favorite. Thanks so much!
