My mom first made this on a camping trip when I was expecting Grace 16 years ago and I still make it all the time. It's not gourmet but it is highly satisfying.
With this final recipe for cold weather cooking I'm officially leaving off winter food and heading into spring menus. Watch out asparagus, I'm coming for you.
1 or more pounds of beef roast, cubed
3 medium potatoes, peeled and cubed
5 medium carrots, peeled and sliced
1 bunch of green onions, sliced
10 ounces of sliced crimini mushrooms
1 envelope Lipton Onion Soup mix
1 can Cream of Mushroom soup
1 can Cream of Golden Mushroom soup
1 can Cream of Celery Soup
1 can of water (maybe a little more if you like it more soupy)
2 bay leaves
4 ounces tomato paste
3 tablespoons Worcestershire sauce
1 generous tablespoon minced garlic
Add everything to your pot (I use a slow cooker) and set on a low heat. Stir every hour or so and slowly cook for about 6 or 7 hours. The smell will drive you crazy (in a good way, not in a "if you kids don't settle down" way). Remove the bay leaves and serve up--perhaps topped with Parmesan or fresh, chopped parsley for color.

Mmmmmmmmmmmmmm.....I love beef stew. Especially on really cold days. When I get back I will definately make this.
Thanks for the recipe - there is an Irish pub that makes amazing beef stew near my parents' house. My dad loves it! This recipe is close to the ingredients they use - I'll have to make it for him next time I visit home!
I just made some Beef Stew yesterday that looks very similar to this. My recipe, though does not include cream of celery and mushroom soup which are excellent ways to thicken it. What I do to make the gravy is coat the stew meat in a cup or so of flour. Along with the flour, add your seasonings, black pepper, salt, whatever else...Use a good amount of olive oil in a deep dish skillet and fry on medium high. As the meat browns start adding the water. Maybe more work than this one.

Where were you a month or so ago when I was so desperately searching for a slow cooker beef stew recipe! We found one but it was different from yours so we will be sure and use your additions next time. Yum!

Ah yes, comfort food. I've just planted a new Bay tree as the last one died. I wasn't going to bother but my daughter wanted to cook something with Bay leaves and was completely flabbergasted that they weren't available 'for free' in the garden.
Maybe I can persuade her to help with the watering too, she's supposed to be the green one afterall.

This sounds yummy - does it freeze? Because in my house I would be the only one eating it.
I love Beef Stew in the Crock Pot. It's one of my favorite meals to make and eat.

I've made this recipe twice now and I love it! It's delicious! The first time I made it my in-laws tried some and they loved it too! I made it on the stove-top both times because I didn't plan ahead enough to do it in the crockpot but it still turned out great! Thanks for sharing your great recipes with us!!
