Insalata Mista

Insalata MistaSummer salads--love 'em!

This one has nice pieces of salami throughout so it's even hearty enough for a main dish.

4 ounces sliced salami
1 1/2 cups red seedless grapes, halved
1/2 cup Craisins (dried cranberries)
10 cups mixed greens
2 pears, cored and sliced
1/2 cup pine nuts, toasted

For dressing:
1/2 cup extra virgin olive oil
3 tablespoons lemon juice
aged balsamic vinegar

Combine everything for the salad in a large bowl then combine the olive oil and lemon juice. Toss with the salad then drizzle the balsamic vinegar over the top. You can't go wrong with this one!

Can I come live with you so I can eat all the yummy food without having to make it myself? Really, this looks so good but I don't think I would have thought to put all those things together. Looks like a possible lunch for me next week!

Ooo I've slipped into the salad post [but that's yummy anyway] but as for the trip and the next rock climbing trip, as you say it's quite a hard balancing act. Close shaves are often timely reminders but I don't think I'd manage to be quite so sanguine. There again, mine are a bit younger. Maybe I'll get there too in time.
