They go perfectly with the wonton soup recipe I posted a couple of weeks ago and what I particularly like about fresh spring rolls is that they're really just little salads wrapped in a noodle.
And as with salads you can customize them to fit your tastes and be creative in all sorts of interesting directions. I myself don't like mint in my rolls so I never put it in but you can not only pig out on mint if you choose but you could add anything you'd want to put in a regular salad: boiled egg, cheese, ham, bean sprouts, alfalfa sprouts, diced tomatoes, whatever.
1 package of rice wrappers
3 cups of torn lettuce
1/2 cup diced green onions
1/4 chopped cilantro
1/2 cup sliced red bell pepper
1/2 cup julienne cucumber
2 cups cooked, rinsed bean threads
shrimp (optional)
salt and pepper to taste
dipping sauce
I put together a video that shows how to wrap them up. It was kind of an afterthought while making spring rolls one night so it's not exactly Francis Ford Coppola but you get the idea.

Great job on the video. (love the necklace too) Do the spring rolls taste gooey? I've never had them.
I love these! My mom also adds avocado slices. So good! She uses either a sweet chili sauce or peanut sauce for dipping. I can eat 100 of these at once!

I love it when you add video to your recipes. It takes step by step to a whole new level and I can always watch and rewind when I am having trouble rather than reading it and trying to figure out what I did wrong.
