Lime Cookies

Lime CookiesI'm not really a creative cookie maker, I have a couple tried and true recipes that I tend to make over and over, probably because cookies aren't really my thing (certainly they can't compare to donuts or ice cream in my adorations) so I whip up my standard batch for the rest of the crew here and don't give them a second thought.

So when I came across this earth-shattering recipe I had two thoughts. "Why didn't I think of putting lime juice in a sugar cookie?" followed by "Oh no, this is bad, very bad. These wicked things are going to be my downfall."

And so it has been. I could eat a whole batch by myself with hardly a pause for a breath and I probably wouldn't even hate myself. Not entirely. I've toyed with the idea of adding white chocolate chips or macadamia nuts into the mix but then I don't know if I could handle the goodness that would result so I've just let it be one of those things that I'm sure would bring bliss without actually knowing first hand.

Shoot, these guys would probably bring an end to the Arab-Israeli conflict if we could just get both sides to sit down with a plate or two and a jug of cold milk. No one could walk away angry after their second bite.

1/2 cup butter
1 cup sugar
1 egg
1/4 cup lime juice
2 teaspoons lime zest (optional)
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
powdered sugar for dusting

Preheat oven to 350 degrees.

Cream butter, sugar and egg. Mix in lime juice and lime zest. Add flour, baking powder and salt. Mix until combined.

Roll dough into small balls (dust hands with flour if necessary to keep dough from sticking), place on greased cookie sheet.

Bake 10 minutes or until they are slightly browned.

Place cookies on a cooling rack and sift powdered sugar over cookies.

Oh, and by the way. We finally got around to seeing the movie Up and though I'm late to the party on this one I will say that it was completely wonderful. I had been uninterested in it after the ambiguous preview added to the dismal two hours I spent stuck in front of Wall-E (even with the beauty of A Bug's Life and Finding Nemo I had a hard time forgiving Pixar for that one) but I kept hearing how great it was. David put it on reserve at the library and when his turn eventually came we watched it together and loved it.

The beginning was tender, the rest was warm and funny and I died laughing when the doberman spoke for the first time. If you haven't yet seen it, get your own name on the list because it's worth it.

OMG, those look scrumptious. I would LOVE to try them. I wonder if I can make them low-fat for my diet?! Hmmm...

Oh, I'm so totally with you on Up! I LOVED it. Wall-E...must admit that I never made it through the whole thing. It was just too unbearable. :(

We enjoyed "Up!" as well, but I have to admit that I didn't get what the "deadbeat dad" aspect to the story line. Couldn't he have just been a grandfather figure to the boy instead of a dad substitute? My daughters (ages 4 and 7) didn't even understand what was going on.

And, yes, Wall-E was miserable.

I LOVE key lime cookies and am definitely going to try this recipe.

UP is one of our favorites. My three year old watched it twice and seems like he already has it memorized. He goes around saying, "Adventure is out there!" I have to admit my favorite part was "Do you dig the hole before or after? . . .It's before!"

The Doberman speaking is one of the funniest things I've ever seen. And Dug is just great. We only recently saw Up for the first time, and I love it!

These cookies--oh, how wonderful they sound. Lime is one of my favorites. And with macadamia nuts and white chocolate chips...oof!

Michelle - Personally, I do not consider the grated lime zest optional. That would be like saying raisin are optional in Oatmeal cookies. Glad you got around to seeing "Up" - it is an outstanding movie especially for us big kids. IMHO, those cookies, with a bowl of Jell-O topped with whipped cream and chopped nuts, would make a perfect lunch. Happy munching.

I fixed the garlic onion fries a few times this week. Super good. Now... lime cookies. Limes are like almost free here. A good treat for kids I think. Even though kids here don't love cookies as much as Americans they may like lime cookies.

We were laughing so hard at that part, we had to pause the movie! Then we went back and watched it again and cracked up all over the place! I really loved UP. :-) Also, these cookies sound delicious and make me wonder why I do not keep lime juice in the house....

I made these cookies and they were fabulous! Apparently my cookie sheets are warped because the cookies all tended to slide towards the center of the pan. I will be making these again and again.

My goodness...lime cookies sprinkled with powdered sugar. That sounds so wonderful and the husband isn't a chocoholic so it's nice to have an alternative. Wonder if I can figure out how to make this heart-shaped...

These look SO yummy! I got swindled, I mean supported, a local school by buying key lime pie cookie dough. It was lime flavored w/ vanilla chips...I bet this would be similar! Yay, thanks for posting this!!!!

I made these cookies yesterday. Seriously, seriously yummy! I could have sat down with a bowl of the cookie dough and been happy! But I baked the cookies and they were good too! I got a lot of compliments and requests for the recipe!

UP...wasn't so crazy about it!
