Slow Cooker Meatballs

Slow Cooker MeatballsYou know, the words "slow" and "cook" don't usually go together too well over here. When it comes to food it's all about fast, furious and (oh yea) ketchup.

However, there are times when I'm on the ball enough to actually think ahead and plan out at 10 am what I'll be serving at 6 pm and if the stars should happen to align and produce such a circumstance this is one of the recipes I turn to.

Slow cookers are nice things when you remember about them.

Anyway, this particular slow cooker recipe is quite right. Probably because it too has processed tomato products in the list of ingredients as well as hamburger; two things guaranteed to produce happiness around here.

Top it off with a bed of noodles and we've got very content mouths.

If you want to save a few steps I'd recommend using frozen, pre-made meatballs which make this that much easier.

1 ½ pounds lean hamburger
1 cup bread crumbs
½ cup egg substitute
1/3 cup fresh parsley, chopped
2 tablespoons minced onion
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon lemon juice
1 16-ounce can jellied cranberry sauce
1 12-ounce bottle of chili sauce

Combine first five ingredients into meatballs. Stir ketchup, brown sugar, lemon juice, cranberry sauce and chili sauce together and pour over the meatballs in a slow cooker. Cook on a low, low heat (maybe 225-250?) 8-10 hours. Serve over noodles.

plan meals? Dom't just throw what you can find in a pan at the last minute? What is this strange thing you talk about?

This sounds super easy. I make meatballs similar to this but I like your recipe better. We will try these for sure. Thanks for sharing.

My mom's recipe is very similar to yours except she adds a can of sauerkraut. Not something you'd expect to add, but delicious and you don't even know that that's what it is.

I want to put raw meatballs into the slow cooker in the AM and come home to cooked meat by dinner... how do I do it... and can I add raw pasta/sauce in there so the whole meal is done by dinner?

Yes you can do it--just put them in with the sauce, set it on low and it'll be done by dinner.
