Hot Artichoke Dip

Hot Artichoke DipWhen we have fancy formal meals such as at Thanksgiving or Christmas I like to make several appetizers to snack on. You know, throw the natives something to appease them so they leave me alone while I'm cooking. This is a great dip and is one of my favorites, though when I make it I find myself doing more snacking that cooking--I really love artichokes.

3½ cups shredded Monterey jack
2 jars marinated artichoke hearts
1 cup diced green chilies
½ cup sour cream
¼ cup Parmesan cheese
toast slices

Combine all the above ingredients in a bowl and mix well. Pour into a shallow, greased baking dish and bake 350 degrees for 25 minutes or until slightly browned and bubbly. Sprinkle with extra Parmesan and serve on toast.

This is one of my favorites. I have a low fat version for this and the spinach one that I get as a special vegetable dip treat. My afternoon snack. :)

I hate artichokes, but love hot artichoke dip. If only all vegetables smothered in cheese and sour cream tasted so good. Oh wait, they do.

I love appetizers and sometimes we eat only appetizers for dinner. Throw me some spinach dip and potato skins and I am a happy woman :)
