Lemon Thyme Popovers

Lemon Thyme PopoversI don't make popovers that often, mostly because I am such a ravenous fan that I'm guaranteed to eat too many so I avoid the situation entirely by not making them.

But maybe you have more self-control than I do. If you're fixing a soup (such as the Beef Stew I mentioned last week) these are a nice side dish and ago well with lighter or hardier soups.

1 cup flour
1 cup milk
2 tablespoons melted butter
2 eggs, beaten
2 teaspoons freshly chopped lemon thyme
1/2 teaspoon salt
1 tablespoon Parmesan cheese, grated

Preheat the oven to 400, mix all the ingredients in a bowl and pour into 10 heavily greased muffin tins (be sure to grease up the sides too). Bake for about 30 minutes or until nice and brown. Let them sit for a minute before trying to coax them out of the tins then serve immediately.

Back when I lived on "the farm" I made popovers every weekend with the Sunday roast only I had to make them like my father-in-law's mother did...batter poured around the roast instead of in a separate pan. Yummy giant popover, cremated roast but that's how they did it back then! Also served them with my homemade crabapple jelly.

Nowadays we no longer have the traditional Sunday roast ...I know my grown boys miss those popovers too!

Oh THESE look lovely and EASY! Have you ever tried them with bacon or ham added instead of the lemon thyme? And what if you do not have Lemon Thyme on hand, do you have another herb to suggest?

I laughed about you avoiding making popovers so that you don't eat too many because I was consuming about 5 servings of lemon bars as I read it. I only make lemon bars to share with others, but we ended up being too late for dessert at my in-law's today, and we went home with a pan full of them, untouched. And so I glutted myself on them.

What makes these so dangerous is how easy they are to whip up! I'll add them to my menu this week. I think it's safe since there are 6 of us and only 10 poppers. I'll probably only be able to get my hands on one and at most two of them. No harm done! :)

My mom used to make these-they were so delicious! I tried to make them once and they collapsed. But I am ready to try again!
