Three Bean Southwestern Salad

Three Bean Southwestern SaladMemorial Day is coming soon and if you're like us you've got a picnic scheduled somewhere in there.

This is a great picnic salad--it's pretty with all those colors, healthy and with the tex-mex flavors it'll be a pleaser for sure.

Though don't mix it too far in advance of serving--the dressing has lime juice which keeps the avocados from browning but also tends to break them down.

2 1/2 cups cut green beans, cooked
3/4 cup fresh corn kernels, cooked
3/4 cup diced red bell pepper
1/2 cup sliced green onions
1/4 cup chopped fresh cilantro
1 2-ounce can diced chilies
1 16-ounce can pinto beans, drained
1 16-ounce can black beans, drained
1 cup diced Roma tomatoes
1 cup diced avocado

Dressing
1/4 cup fresh lime juice
1/4 cup red wine vinegar
1 tablespoon minced garlic
1 tablespoon olive oil
2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon red chile sauce

Add green beans and next seven ingredients (through black beans) in a bowl and toss to combine. Combine the ingredients for the dressing and mix well. Add dressing to salad, cover and chill 30 minutes. Gently stir in tomatoes and avocado and serve immediately.

Sounds yummy! I make a "Mexican Bean Salad" and this reminds me a little of it. Gotta love the cilantro!
